Zucchini Squares: Mom’s Go-To
Golden, cheesy, and packed with flavor and freshness, these zucchini squares are the ultimate bite-sized appetizer. They’re fluffy, savory, and just the right amount of indulgent. Perfect for potlucks, BBQs, or whenever you need a guaranteed crowd-pleasing make-ahead dish.

These zucchini squares are packed with summer’s best veggie and baked into irresistible little bites of cheesy, herby goodness. They’re the kind of no-fuss dish that works for anything from backyard BBQs to cozy brunches—or even a midnight snack when you just can’t help yourself.
Growing up, zucchini squares were a staple at every family gathering. My mom’s version was straight from that iconic yellow Bisquick box—pure 80s nostalgia. But these days, I’m all about skipping the mystery ingredients and keeping things simple with fresh, straightforward ingredients. Trust me, when they’re baking, the whole house smells like childhood summers—comforting, mouthwatering, and just a little bit magical.
The best part? This recipe is so easy, it practically makes itself. So let’s get started on these fluffy, cheesy, herby squares—you’re about to have a new favorite in your rotation!
Ingredients

- All-purpose flour – Keeps the squares light and fluffy without getting dense.
- Baking powder – Not baking soda—gives the squares a perfect lift.
- Salt – Enhances the flavor of the flour mixture.
- Melted butter – Helps everything mix smoothly.
- Zucchini – Finely chopped (if you have a mandolin, here’s the time to use it for even pieces.)
- Fresh parsley – Adds a fresh, herby brightness.
- Seasoned salt – Adds more depth than regular salt.
- Dried basil & oregano – Add a classic Italian-inspired herby depth.
- Grated Parmesan cheese – Brings in a rich, salty, cheesy bite.
- Onion – Adds a subtle sweetness and savory balance.
- Garlic – Gives that subtle garlicky punch of flavor.
- Vegetable oil – I use it instead of canola oil because it has a touch more fat, which adds richness and better texture.
- Eggs – Bind everything together for that perfect fluffy texture.
How to Make Zucchini Squares
Prep the oven & pan. Preheat your oven to 325°F. Grease a 13 x 9 x 2-inch baking dish. I like to grease the pan with butter using a paper towel or parchment paper—it adds just a little extra flavor to the bake.
Prep the ingredients. Peel the zucchini, leaving strips of the skin for a pop of color in the bake, then slice it up. If you have a mandolin, use it for even, thin slices. Chop the onion, garlic, and parsley, grate the Parmesan cheese, and beat the eggs until smooth.

Mix the ingredients. Whisk together the flour, baking powder, salt, and melted butter in a large bowl. Then, throw in the parsley, Parmesan, onion, garlic, and dried herbs. Add the oil and eggs, mixing until everything is well combined. Finally, fold in the zucchini until everything is combined.

Bake to perfection. Pour the batter into the prepared dish and spread it evenly. Bake for 30-35 minutes until golden brown and set in the center. Let the bake sit for 10 minutes before slicing.

Cool & slice. Let the zucchini squares cool slightly before slicing into bite-sized portions.

Make it Your Own
I love encouraging you to make my recipes your own! Experiment, have fun, and channel your inner chef. Here are a few variations for you to try:
- More Fresh Herbs: Add all your herb garden favorites. Add dill, thyme, or basil.
- Cheesy Twist: Swap in shredded mozzarella, Gruyère, or even sharp provolone.
- Smoky Flavor: Crumbled bacon or pancetta on top adds a savory, smoky element.
- Spicy Kick: Diced jalapeños or a pinch of cayenne give it some heat.
- Veggie Boost: Toss in some roasted red peppers or sun-dried tomatoes.
What to Serve with These Zucchini Squares
A plate of these fluffy, cheesy zucchini squares with a crisp Sauvignon Blanc is really all you need—but why not make them part of a spread?
Try cutting them into bite-sized squares or baking them in mini muffin tins for a brunch party. They’re the perfect poppable snack!
Pair them with a platter of grilled shrimp or juicy steak for a summery, satisfying combo—all of which dip wonderfully in my creamy garlic aioli. Satisfying, delicious, and so easy…what more could you ask for?

Make Ahead & Storing
- Make ahead—These zucchini squares are perfect for making ahead! You can assemble the mixture and leave it in the fridge until ready to bake. Or bake them and warm them when ready to slice. They are good at room temperature too.
- Reheat – To warm them up, choose your method:
- Microwave – Pop them on a plate and microwave for about 20 seconds until warmed through.
- Oven – Preheat to 350°F and bake for about 10 minutes to restore some of that fresh-baked goodness.
- Air fryer – Set to 350°F and heat for 3-5 minutes for a little extra crispness.
- Store – Keep them in an airtight container or zip-top bag in the fridge for up to 4 days.
