Turkey Wontons: A Fall Favorite

Turkey Wonton Ingredients

  • Turkey Breast – Leftovers are great, but you can also buy packaged, already-cooked turkey breast. I get mine from Trader Joe’s. Deli turkey will not work in this recipe.
  • Dried Cranberries – Fall’s classic fruit. They add a sweet, tart flavor and pair perfectly with the savory turkey.
  • Mascarpone cheese – Adds a smooth, creamy texture. It has a slightly sweet flavor that compliments the savory.
  • Pecans – Finely chopped. Use roasted, salted pecans, adding a nutty, salty note to the wonton.
  • Wonton wraps – Store-bought, usually found in the produce section of the market.

How to Make Turkey Wontons

They are really simple to make; just need some time to assemble. Let’s get right to it…

First, chop the cooked turkey into small cubes and finely chop the pecans.

Next, add chopped turkey, mascarpone, cranberries, and pecans to a bowl and fold until all the ingredients are incorporated.

Lay out wontons, and with a small cookie scooper, scoop out a dollop of the mixture and put it in the middle of each wrap.

Fill a small bowl with water, wet your finger, and moisten the wraps around all four sides. Gently fold the wrap into a triangle, and press the ends together. To securely seal the mixture in the wrap, press ends of the wraps with a fork.

Now, let’s fry ’em up! In a large fry pan, heat 1/2 cup canola oil. When the oil is hot, place the wontons in the pan without touching and fry for about 2 minutes. With tongs, flip the wontons and fry them for 2 minutes on the other side until golden and crispy.

Make Ahead

Assemble all the turkey wontons, place them on a baking pan lined next to each other, and pop them in the fridge until ready to fry.

If you want to avoid frying while guests arrive, fry ahead. Let them cool, then put them in a zip-lock bag and store them in the fridge until ready to heat. To reheat, place them on a baking sheet and heat in the oven at 400 degrees for about 15 minutes.

Freezing & Storage

Assemble the turkey wontons on a baking sheet like the image above. Flash freeze the wontons on the sheet in the freezer for about 2 hours. Then, store the wontons in a zip-lock bag. Freeze for up to 3 months. Fry frozen wontons.

Cooked wontons can be stored in the fridge for up to 3 days in an airtight container or ziplock bag. They should be reheated in the oven at 400 degrees for about 15 minutes.

Quick Tip

These turkey wontons are delicious on their own, but you can serve them with cranberry or mascarpone dip. I like to garnish fried sage over wontons for a subtle fall flavor note and a beautiful presentation.

Equipment

  • 1 large fry pan

Ingredients

  • 2 cups cooked turkey breast chopped into small cubes
  • ½ cup Mascarpone cheese
  • ½ cup dried cranberries
  • ¼ cup salted roasted pecans finely chopped
  • 1 package wonton wraps
  • ½ cup canola oil

Instructions

  • Chop cooked turkey breast into small cubes.
  • Finely chop pecans.
  • Add turkey, mascarpone, cranberries, and pecans to a large mixing bowl. Fold all the ingredients together until incorporated.
  • With a small cookie scooper or small spoon scoop mixture into the center of each wonton.
  • Moisten the wonton edges with water with your finger and gently fold the wonton into a triangle. Press together the edges. To secure the mixture into the wonton, press the edges with the back of a fork. Repeat for all the wontons.
  • Heat oil in a large fry pan. When the oil is hot (around 350 °), add wontons to the pan without overcrowding.
  • Fry for 2 minutes per side, flipping with tongs. Fry in batches.
  • Drain on paper towels. Plate and enjoy!
