How This Chili Became a Cabin Classic
There are a million versions out there, but this one has been on repeat in my kitchen for years, and for good reason. Back a million years ago, I started with a simple chicken chili recipe and decided to play around a bit, adding a few “secret” ingredients that just take this chili to another level. From casual dinners at the cabin to game day gatherings, this recipe has earned its permanent spot on my table.
Just set out some toppings on the side and maybe some of my Gluten-Free Cornbread, and it suddenly feels like a full-blown feast.
Why You’ll Love This White Chicken Chili
- Easy and make-ahead: Using rotisserie chicken keeps prep minimal and flavor maxed out.
- Game day ready: Serve it straight out of your Dutch oven, keep it rustic, and let everyone top their own bowl.
- Mild but flexible: I keep mine on the mild side and let my crew spice it up how they like; extra jalapeños and always hot sauce on the side.
White Chicken Chili Ingredients

- Rotisserie chicken: Go with classic flavor. BBQ or lemon-pepper can change the taste of the chili. Shred it up and you’re already halfway there.
- Butter + olive oil: A little of both adds richness and helps sauté the onions and garlic beautifully.
- Yellow onion: Adds a subtle sweetness once it softens.
- Garlic cloves: Minced.
- Flour: Helps thicken the base.
- Great Northern beans: Drained and rinsed.
- Small white beans: Drained and rinsed. The combo adds texture.
- Cream-style corn: Adds sweetness and that velvety, comforting texture.
- Jar of mild salsa verde: The secret to big flavor without extra work.
- Chicken bouillon cube: My other secret ingredient for that deep, savory flavor.
- Low-sodium chicken broth: Always use low-sodium so you control the salt.
- Cornstarch: Mixed with 1 cup broth. A quick trick to thicken the chili just right.
- Cumin, Paprika, Oregano, and Salt: Warm, earthy, and balanced flavors.
- Lime Juice: Brightens everything at the end.
- Heavy cream (or half and half): Stir in at the end for that dreamy creamy finish. Use half and half if you like a thinner consistency.
How to Make White Chicken Chili
Start with your base. In a large Dutch oven, melt the butter with olive oil. Add the onions and sauté until soft and translucent. Toss in the garlic and cook for another minute. Sprinkle with flour and stir to combine until it becomes a bit pasty.

Build the flavor. Add the salsa verde, cream-style corn, both beans, chicken bouillon, and all the seasonings. Add the shredded chicken. Stir it all together so the flavors come together.
Whisk the cornstarch with 1 cup of the chicken broth in a separate small bowl and stir it into the pot.

Add remaining broth. Squeeze in lime juice. Finish with cream. Let simmer for about 15 minutes before you ladle out that creamy goodness.

Topping ideas
This is where everyone gets to play. I keep the chili mild and let my crew build their bowls however they like. Some go classic, others pile it sky-high. Here are a few of our favorites:
- Crushed tortilla chips or strips: A little crunch is always fun.
- Shredded cheese: Monterey Jack, Pepper Jack. A cheesy chicken chili is my fav.
- Sour cream or Greek yogurt: A cool swirl on top.
- Diced avocado: Creamy, fresh, and some different textures in the bowl.
- Fresh cilantro + green onions: For that pop of color (and flavor).
- Pickled or fresh jalapeños: For those who like to sweat a little.
- Hot sauce bar: Line up a few bottles and let everyone find their level of brave.
- Lime wedges: A quick squeeze brings it all to life.
Serve everything on the side and watch your peeps go to town.
White Chicken Chili Variations
Every kitchen (and crew) is a little different, so here are a few easy ways to make this White Chicken Chili your own:
- Turn up the heat: Want it spicier? Use a spicy salsa verde or toss in a diced jalapeño when you sauté the onions and garlic.
- Gluten-free: Just swap the flour for a gluten-free flour and you’re good to go.
- Adjust the thickness: If you prefer a thinner chili, add a bit more broth or use half and half instead of heavy cream.
- Make it vegetarian: Omit the chicken and add an extra can of beans.
- Bean swap: Don’t stress if you don’t have two types of beans, just use what you’ve got. Great Northern or small white beans both work great.

How to Store & Reheat
This is a great make-ahead recipe, in fact, it might even taste better the next day once all those flavors have had time to hang out together.
- Store: Let the chili cool completely, then transfer it to an airtight container. It’ll keep in the fridge for up to 5 days.
- Reheat: Warm it gently on the stove over low heat, adding a splash of chicken broth if it’s thickened up a bit. For a single serving, it heats up nicey, nice in the microwave. Just 2–3 minutes, stirring halfway through.
White Chicken Chili FAQ
Absolutely. Just make sure it’s not heavily seasoned. Plain roasted or grilled chicken works best. Shred it up and toss it right in.
Yes! Just skip the cream before freezing. Add it in after reheating so your chili stays creamy and smooth. It can be stored in the freezer for up to 3 months. But, again, no cream, okay?
You can, but skip the flour step. The roux (that butter, onions, and flour combo) doesn’t really work in a crockpot; it won’t thicken the same way. Also, don’t add the cream until you’re ready to serve. That keeps it smooth and creamy instead of separating. Add all the other ingredients to the crockpot, mix the cornstarch with the flour in a separate bowl before adding to the crockpot. Cook on low for 4-6 hours.
You can! Shredded turkey works perfectly (especially with Thanksgiving leftovers), or try ground chicken or turkey if that’s what’s in your fridge. Even leftover pulled pork can sneak its way in; it gives the chili a smoky twist that’s surprisingly good.
