Summer Bourbon Cocktail: Thyme to Sip
This Summer Bourbon Cocktail is what happens when you take golden hour energy, a bottle of bourbon, and a little sweet-talking from nature’s finest—honey and thyme.

It’s bold, a little herbal, and just the right amount of sweet.
This Summer Bourbon Cocktail was born during one of those golden-hour hangs at the cabin. My friend John looked over and casually asked, “Hey, do you have any lemonade?” Next thing I know, he’s pouring a splash into a glass with bourbon for him and my hubby—and that’s when it hit me. This could totally be the guys’ go-to cocktail (or the gals) all season long.
Why not round it out with a little honey from the farmers market and fresh thyme snipped from the herb pot? It’s smooth, summery, and has just the right herbal kick.
So next time it’s cocktail hour…
And the guys aren’t quite feeling a spritz with the ladies? Slide this one across the table instead. It’s bourbon-forward, herbaceous, and smooth enough to sip all night.
Summer Bourbon Cocktail Ingredients

Hey, I’m just giving you a little help here—you do you. Totally make it your own.
- Bourbon – What we love to sip on at the cabin. Go with a favorite like Woodford Reserve or Buffalo Trace—can’t go wrong either way.
- Lemonade – Add more or less depending on your vibe. Want it stronger? Ease up. Want it lighter? Pour away.
- Honey – Not giving you a measurement here. Go with your gut. I did a little drizzle and called it good.
- Fresh thyme – Yes, fresh is key. Shake a sprig right into the cocktail shaker to infuse the flavor, then stick another in your glass. When that thyme hits your nose with each sip? That’s the good stuff.
How to Make a Summer Bourbon Cocktail
Super easy…
First, fill a cocktail shaker halfway with ice.
Pour in your bourbon and lemonade.
Drop in some thyme sprigs.
Drizzle in honey.
Shake. Pour. Garnish. Sip!

Perfect Occasions to Serve This Summer Bourbon Cocktail
Whether you’re flipping burgers, catching up with your peeps, or kicking back after a long, sunny day, this Summer Bourbon Cocktail fits right in. Serve it at…
- Backyard BBQ’s
- Father’s Day gathering
- Summer Holiday soirée

Make Ahead & Batch it Up
Batch this cocktail ahead of time and stash it in the fridge—just skip the ice until serving. You can mix the bourbon, lemonade, honey, and even toss in a few sprigs of fresh thyme while it chills. The thyme infuses right into the bourbon and gives it an earthy, elevated flavor without any extra effort.
When it’s time to serve, just shake individual portions with ice and strain into glasses. Or set out the shaker, ice, and garnishes so your guests can play mixologist. Easy, breezy, and totally cocktail-hour ready.
Let’s Talk Bourbon
Use whatever bourbon you love, but if you’re looking for a few solid picks—Woodford Reserve and Buffalo Trace are always welcome at the cabin. They’re smooth, flavorful, and pair perfectly with the honey and thyme in this cocktail.
Now, this isn’t the time to bust out your fanciest bottle, but don’t reach for the bargain bin stuff either. You want a bourbon that’s good enough to sip on its own—it’s still the star of the show here.
- Mellow & smooth: Go with a classic 80–90 proof bourbon like Buffalo Trace, Maker’s Mark, or Basil Hayden’s. These are easygoing, balanced, and won’t overpower the subtle sweetness and herbs.
- Bold & boozy: Want a little more kick? Try a higher-proof option like Wild Turkey 101, Elijah Craig Barrel Proof, or Knob Creek. These bring the heat and hold up beautifully, especially if you’re serving this over ice or batching it ahead of time.
Whether you’re keeping it mellow or bringing the heat, the thyme and honey round it all out into one smooth summer sip.
