Some nights (or days) call for a little extra magic—a touch of heat, a spark of flavor, and a drink that feels like the start of something good. This Spicy Paloma is a bold reimagining of the classic, designed for those who want a drink that stands out.

This cocktail dances on the edge of heat and sweetness, with the boldness of tequila, the zesty punch of fresh grapefruit and lime, and the warm heat of jalapeño simple syrup. Shaking it with slices of fresh jalapeño gives it that extra kick, making it extra zippy.

But here’s the thing: this Spicy Paloma deserves more than just a casual pour. It needs to be crafted with care—no shortcuts and no cutting corners. Sure, you can use bottled grapefruit juice, but trust me, fresh juice makes all the difference, and making your own homemade jalapeño syrup is a game changer.

This creation is your invitation to slow down, indulge, and let the evening unfold. When I hand over a glass of this to my peeps, rimmed with dramatic black lava salt, I’m practically giddy. And if you’re a fan of tequila’s spicy side, don’t miss my other fiery favorites, the Spicy Pomegranate Margarita, my Spicy Blood Orange Margarita and my Spicy Mango Margarita. Spicy Paloma Ingredients

  • Tequila: This Spicy Paloma cocktail calls for a special tequila. I usually splurge when crafting up this cocktail and use silver Casamigos. I just love how smooth this tequila is—it adds depth and character to every sip.  Use your favorite!
  • Fresh Grapefruit Juice: Freshly squeezed grapefruit juice brings a vibrant, tangy brightness that elevates the entire cocktail, making every sip refreshing and full of flavor. If fresh grapefruits at your local supermarket are not up to par, bottled grapefruit juice will do, I guess.
  • Lime Juice: A zesty kick, also freshly squeezed, PLEASE!
  • Jalapeño Simple Syrup: The game-changing ingredient that adds warmth and a subtle sweetness. Please try making your own homemade simple syrup. It is so easy and so much less expensive. And it makes plenty to store in the fridge for up to a month. You can also buy it on Amazon, but I trust you’re going to try this really “simple” homemade syrup.
  • Fresh Jalapeño Slices: Shaken with the drink to infuse an extra layer of spice, totally optional.
  • Club Soda: A bubbly topper to give the cocktail a refreshing finish.
  • Garnishes (Optional): Grapefruit, lime slices, or jalapeño rounds to finish the drink with flair. And if you really want to make an impression, rim the glass with black lava salt—it’s dramatic, fun, and never fails to get a “Wow!”

How to Make A Spicy Paloma

Jalapeño Simple Syrup:

  1. Combine 1 cup of water and 1 cup of sugar in a small saucepan over medium heat. Stir until the sugar is fully dissolved.
  2. Slice 1-2 fresh jalapeños (adjust based on your spice preference) and add them to the saucepan.
  3. Simmer the mixture for 10 minutes, then remove from heat and let it sit and steep for an additional 15 minutes to enhance the flavor.
  4. Strain the syrup into a jar or bottle, discarding the jalapeño slices. Store in the refrigerator for up to 1 month.

Spicy Paloma Cocktail:

  1. Cut the grapefruit in half and squeeze the fresh juice into a bowl fitted with a strainer to strain out any pulp.
  2. Fill a shaker with ice and add tequila, fresh grapefruit juice, lime juice, jalapeño simple syrup, and 2-3 fresh jalapeño slices. For an extra zip, add a piece of a grapefruit rind. (Just cut a piece of the grapefruit skin and throw it in the shaker.
  3. Shake vigorously for at least 10 seconds to mix and chill the ingredients.
  4. Strain the cocktail into your favorite glass filled with fresh ice. Top with club soda and give it a little stir. For added flair, rim the glass with black lava salt before pouring.
  5. Garnish with a slice of grapefruit, a lime wedge, and a jalapeño round.
  6. Serve and enjoy the spicy, refreshing Caliente Kiss!

All About Tequila: Your FAQ for the Perfect Paloma

What type of tequila works best for a Paloma?
For this cocktail, I recommend a silver (blanco) tequila like Casamigos. Its crisp, clean profile pairs beautifully with the fresh grapefruit juice and lime. A reposado tequila can work too if you prefer a slightly richer, more complex flavor.

Why silver tequila?
Silver tequila is unaged, which means it retains the natural, pure flavors of the agave plant. It’s smooth and vibrant and doesn’t compete with the citrus and jalapeño notes in the Caliente Kiss.

Can I use a budget tequila?
You can, but if you really want to elevate the experience, splurge on a quality tequila. A smoother tequila ensures that every sip isn’t a burn.

What makes a tequila “smooth”?
The smoothness of tequila comes from the quality of the agave and the distillation process. Go for premium brands like Patrón Silver Tequila, Casamigos Blanco, and Espolòn Tequila Blanco. They focus on small-batch production, which results in a more refined taste.

What about mezcal?
If you love smoky flavors, mezcal can add a unique twist to your Paloma. Just keep in mind that it will change the overall flavor profile, making it smokier and more intense.

Any tequila tips for beginners?
Start with a blanco tequila and sip it neat before mixing. This helps you understand its flavor notes and appreciate how it enhances the cocktail. Also, always look for tequilas labeled “100% de agave” to ensure you’re getting a high-quality product.

Variations

  • Grapefruit Soda Swap: For a more grapefruit-forward paloma, use grapefruit soda instead of club soda.
  • Non-Spicy Option: Swap the jalapeño simple syrup with regular simple syrup and skip the jalapeño slices for a milder, more traditional Paloma. You’ll still get all the citrusy, tequila-forward goodness without the heat. For more simple syrup options, please refer to my Hibiscus Simple Syrup post.
  • Sweeter Paloma: Add extra jalapeño simple syrup or more grapefruit juice for a sweeter version.
  • Boozier Paloma: Increase the tequila to give it more of a kick.

I’d love for you to make this your own signature cocktail. Experiment with flavors, and let me know your unique spin in the comments below—I can’t wait to hear how you made it yours!

Make Ahead Option

If you’re hosting and want to get a jump on prep, you can make certain elements ahead of time. Freshly squeeze the grapefruit and lime juices and store them in sealed containers in the refrigerator for up to 24 hours. This way, your juices stay vibrant and fresh without compromising the cocktail’s flavor. Keep the jalapeño simple syrup ready to go, and you’ll be able to shake up your Spicy Paloma in no time!

Black Lava Salt: Let’s Talk About This Cabin Craze

It’s going to be all the rage—well, at the cabin, anyway! Black lava salt isn’t just a garnish; it’s a statement. There are so many reasons to love…

  • Rich in minerals: It contains more minerals than regular table salt, making it a unique addition to your pantry.
  • Use sparingly: A little goes a long way, so there is no need to rim glasses all night long.
  • Temporary lip tint: It might temporarily turn your lips a darker color if your glass is rimmed all night, much like too much red wine. I might know a little something about red-stained lips at the end of the night. Remember!?!? No judements at the cabin.
  • Slightly smoky flavor: Thanks to the activated charcoal, it adds a hint of smokiness to complement the drink.

Not only does it make your rimmed glass look like something out of a luxe cocktail bar, but it also adds a little extra intrigue to every sip. Trust me, once you try it, you’ll be sprinkling it on everything from cocktails to avocado toast. At the cabin, it’s practically a new house rule!
