Pumpkin Pudding Cake With Toffee Sauce
This Pumpkin Pudding Cake recipe is pure fall comfort. It is the perfect dessert to whip up for a cozy fall gathering. Moist, full of warm spice, and drizzled with buttery toffee sauce that makes sweater weather worth celebrating.

I first made it in a cooking class back when I was newly married (so basically a million years ago). The class was held in one of those charming little shops that carried every kitchen gadget and spice you could imagine, with a chef’s kitchen tucked in the back. On the menu that day was pumpkin pudding cake, and it completely changed my mind about the whole pumpkin craze. I’ve been making it ever since.
Over the years, I’ve played around with it, added a few more fall spices, and now it’s become a staple in my seasonal lineup. It always makes it into my fall menu when the whole crew’s at the cabin. Totally make-ahead and super easy.
This is my very first dessert on Cabin Cravings (I’m usually a savory gal), but this one had to make the cut. Let’s get to it, shall we?
Pumpkin Pudding Cake Ingredients

- All-purpose flour – the base that gives the cake structure without making it heavy.
- Baking powder & baking soda – the rise-and-shine team that keeps your cake fluffy.
- Ground cinnamon – warm spice that screams fall.
- Pumpkin pie spice – I love using the one from Primal Palate for the perfect cozy blend.
- Salt – just a pinch to balance out the sweetness.
- Unsalted butter, room temperature – adds richness.
- Light brown sugar – for sweetness with a hint of molasses depth.
- Eggs – they bind everything together and help with lift.
- Pumpkin (canned) – bringing moisture and that classic pumpkin flavor.
Toffee Sauce Ingredients

- Unsalted butter – the rich, buttery base that makes this sauce irresistible.
- Light brown sugar – melts into the butter for that deep, caramel-like sweetness.
- Heavy cream – brings the silky, velvety texture you want in a proper toffee sauce.
- Light corn syrup – keeps the sauce smooth and glossy.
How to Make Pumpkin Pudding Cake
Start by positioning a rack in the center of the oven and preheating to 350°F. Lightly butter a 13×9-inch baking pan so nothing sticks.
In a medium bowl, sift together the flour, baking powder, baking soda, cinnamon, pumpkin pie spice, and salt.
In a separate large bowl, beat the butter and brown sugar with an electric mixer on high until the mixture is light and fluffy, about three minutes. Beat in the eggs one at a time, then mix in the pumpkin. Don’t worry if it looks a little curdled, it all comes together once the dry ingredients go in.

Pour into the prepared 13×9 baking dish.
While the cake is baking, make the toffee sauce.
Melt the butter and brown sugar together in a heavy-bottomed saucepan over medium-low heat, stirring often until the sugar dissolves. Whisk in the cream and corn syrup, then bring to a gentle boil. Keep an eye on it so it doesn’t boil over.
Cook uncovered, whisking often, until the sauce is glossy and smooth, about eight minutes. Turn off the heat but keep it on the burner to keep the sauce warm.

When the cake is done, transfer the pan to a wire rack.
Use a fork to poke holes all over the warm cake, then pour about a cup of the sauce across the top, spreading it out evenly. Let it stand for ten minutes so the sauce can sink in. Keep the remaining sauce warm, and if it separates, just whisk it back together.

Cut into squares, drizzle with more warm sauce, and I strongly suggest to top with a dollop of whipped cream and a sprinkle of pumpkin pie spice.

A Cozy Fall Menu to Pair with Pumpkin Pudding Cake
Since this fall dessert is a total showstopper, let’s build out a whole fall menu around it.
We’re starting with a signature cocktail, because it’s a must. Sticking with the pumpkin theme, I say shake up my Pumpkin Martini. It’s dessert in a glass, which means we’re kicking things off sweet and ending even sweeter.
While everyone sips, set out a charcuterie board loaded with seasonal goodies. Figs, crisp apple slices, and a mix of cheeses. Creamy brie with figs? Perfection. Add some prosciutto too, because it always looks cozy draped on a board.
For a finger appie, go with my Turkey Wontons. They’re a bit of a labor of love, but worth it, and freezer-friendly if you prep ahead. My friend Nancy requests them every fall, so they’ve become a tradition.
The main event has to be my Brown Butter Chicken. It’s all kinds of comforting. Keep it simple with some crusty bread on the side and maybe a little Creamy Parmesan Orzo, but don’t go too heavy… we’re saving room for dessert.
And then comes the star: this Pumpkin Pudding Cake. Drizzled with warm toffee sauce, topped with whipped cream, and guaranteed to wow your peeps.

Before You Bake: Pumpkin Pudding Cake FAQ
Yes! Bake the cake a day in advance, then drizzle with warm toffee sauce before serving. If you’d like the cake warm, place the cut pieces on a cookie sheet and pop them into the oven until gently heated through. The sauce also reheats beautifully. Just whisk if it separates.
Cover the cake tightly and refrigerate for up to 3 days. Warm the sauce gently before serving so that it becomes glossy and delicious again.
I don’t recommend freezing this dessert. The cake is so moist that freezing changes the texture. It’s best enjoyed fresh.
Pumpkin pudding cake is richer and gooier than a standard pumpkin cake. Fork-poked holes let the toffee sauce soak in, giving every bite a decadent, melt-in-your-mouth texture.
Absolutely! Just bake the batter in two pans and keep plenty of warm toffee sauce on hand for extra drizzling. This cake was made for sharing.
