This isn’t the cocktail you decide to make ten minutes before your guests arrive. It takes a little planning. But sometimes the very best things do.

The first time I made this Peach Thyme Spritz, I knew it was going to be one of those recipes I’d make every single summer. Not because it’s the easiest cocktail on my website, but because every sip reminds me exactly why I love entertaining.

Fresh peaches are at their absolute best this time of year, and while everyone else is baking cobblers and tossing peaches into salads, I’m over here making cocktails. No judgement, right?

My mom has a peach tree right next door to our cabin, and it is hit or miss most years. Some summers it barely gives us a handful. But the last couple of years it has gone all in, and we end up with more peaches than any one family should reasonably have. I had to get creative with all those peaches, so why not a cocktail recipe

Let’s get into how to make this beauty!

Ingredients in A peach Thyme Spritz

All the ingredients in a peach thyme spritz on a wooden surface with white text next to each ingredient.
  • Peach puree – An easy puree of frozen fresh peaches.
  • Peach thyme simple syrup -Adds an extra sweet peach layer.
  • Vodka – My go to is Tito’s. Gives the cocktail an extra kick.
  • Lemon juice – Freshly squeezed.
  • Prosecco – For the bubbly top.
  • Fresh thyme – Used in the syrup and for garnish.

How to craft up this Peach thyme spritz

Make the peach puree. Peel and cut your peaches, then freeze the peeled fruit. Once frozen, blend it with a squeeze of lemon, a drizzle of honey, and a pinch of sea salt. Do not throw those peach skins away, you are going to want them for the next step. (This puree is a whole recipe in itself. A wonderful treat to keep in your freezer).

Make the peach thyme simple syrup. Take the peach skins you just saved and throw them in a pot with sugar, water, and a few sprigs of fresh thyme. Simmer until the sugar dissolves then strain and cool. This syrup is doing double duty, it gives you the peach flavor plus that soft, almost savory hit of thyme, and it uses up scraps you would have tossed anyway. Keep this stocked in your fridge all summer long.

Build the cocktail. Fill a cocktail glass with ice, then add the vodka, lemon juice, peach thyme simple syrup, and peach puree. Give it a good stir then, top it with the Prosecco. Throw in some extra fresh peach slices then garnish with a sprig of fresh thyme, because we eat with our eyes first and this drink deserves to look as good as it tastes.

Can I Make This Peach Thyme Spritz Ahead of Time?

Absolutely! In fact, I think this cocktail is even better when you do a little prep ahead.

Blend the peach purée up to 3 days in advance and store it in an airtight container in the refrigerator. While you’re at it, make a batch of the peach thyme simple syrup. It will keep beautifully in the fridge for up to 2 weeks, and trust me, you’ll find plenty of excuses to use it. Stir it into iced tea, sparkling water, lemonade, or your next happy hour cocktail.

When it’s time to serve, simply add the vodka, peach purée, syrup, and fresh lemon juice to your glass or cocktail shaker. Top each drink with chilled Prosecco just before serving so every glass stays crisp, bubbly, and refreshing.

If you’re hosting a crowd, I love setting out the peach mixture in a pitcher and letting guests top off their own glasses with Prosecco. It’s easy, festive, and keeps the bubbles sparkling all evening.

The Peach Pit: Your Questions, Answered

Can I use frozen peaches?

Yes! Frozen peaches are a great option when fresh peaches aren’t in season.

Can I substitute another sparkling wine?

Absolutely. Prosecco gives this cocktail a light, fruity finish, but Champagne or any dry sparkling wine will work beautifully.

Can I skip the vodka?

Of course! I just like the little extra kick it brings. Leave it out, and you’ll still have one incredibly refreshing peach spritz.

Can I make this into a pitcher cocktail?

Yes! Mix the vodka, peach purée, peach thyme simple syrup, and lemon juice ahead of time. Keep the mixture chilled, then add the Prosecco to each glass just before serving to keep the bubbles fresh.

Can I make it without alcohol?

You can! Skip the vodka and use a nonalcoholic sparkling wine or club soda instead of Prosecco. You’ll still get all that fresh peach flavor with a refreshing sparkle.
