Haven’t thought of lemongrass as an ingredient? I promise you will. I first discovered this gem of an ingredient when I stopped into my trusty specialty food store near the cabin, The Proper. (Sidenote: If you’re ever in Narrowsburg, NY, you must stop there. So cute! And they have so much yummy stuff to eat.)

Anyway, I picked up some of their homemade dumplings with lemongrass, and let me tell you, it was something that instantly hooked me. I became slightly obsessed and knew I had to experiment with lemongrass myself. And while I’m currently testing a dumpling recipe inspired by that savory, lemony bite, I thought, why not start with a cocktail? Because, priorities.

This lemongrass cocktail is so darn yummy; where do I start? The aromatic simple syrup made from fresh lemongrass sets the tone, pairing beautifully with vodka, fresh lemon juice, and a splash of ginger beer, for a little kick and fizz.

Once you make this syrup for the cocktail, you’ll want to have it on hand in your fridge, ready for emergency hydration! This way, you can easily whip up this sip when your bestie swings by after her pickleball game and wants to tell you about her play-by-play on the patio. You’ll need a drink for that!

So, if you ever spot lemongrass, don’t pass it up. Trust me, it’s really everything. Let’s get to the blend…

Lemongrass Cocktail Ingredients

Picture of the cocktail ingredients on a cutting board with text.
  • Vodka: I love using Tito’s for its smooth, clean taste that pairs beautifully with the lemongrass.
  • Lemongrass simple syrup (recipe below): Adds the perfect touch of sweetness and that signature lemongrass aroma.
  • Fresh lemon juice: Brightens the drink and adds a refreshing citrusy kick. Please, no bottled crap.
  • Ginger beer:  Just a splash adds a little fizz and spice. My go-to brands are Goslings or Fever-Tree.
  • Ice: To keep it perfectly chilled.
  • Lemongrass stalk or lemon wedge: Optional garnish for that little extra.

Let’s Start with the Lemongrass Simple Syrup Recipe:

  1. In a small saucepan, combine 1 cup of water and 1 cup of sugar.
  2. Bring to a simmer over medium heat, stirring until the sugar dissolves.
  3. Add 2-3 stalks of fresh lemongrass.
  4. Let it simmer gently for 5 minutes, then remove from heat and sit and steep for another 15 minutes.
  5. Strain into a jar or bottle and let cool completely. Store in the fridge for up to one month.

Cabin Tip: Unlocking Lemongrass Flavor

To get the most flavor and aroma out of your lemongrass stalks, start by cutting off the bulbous ends. Peel away the tough outer layer to reveal the tender inner stalks. Cut them into halves or thirds, depending on the length, then give them a little bang with a mallet to release those aromatic oils. This simple prep step makes all the difference when creating a lemongrass-infused syrup or any recipe calling for this magic ingredient.

Perfect Pairings: What to Serve with Your Lemongrass Cocktail

A cocktail this fresh and vibrant deserves equally delicious pairings. Try serving it alongside light and flavorful appetizers like my grilled shrimp, ahi tuna appetizer or my leek and goat cheese tart. Cheese boards with mild goat cheese or creamy brie also work beautifully. Basically, think fresh, zesty, and a little indulgent.

FAQs About Lemongrass and This Cocktail

1. Where can I find fresh lemongrass? Fresh lemongrass is commonly found in the produce section of specialty grocery stores or Asian markets. I’ve had luck finding it at my local Whole Foods. Look for firm stalks with a pale green color and avoid any that look dried out or shriveled.

2. Can I use dried lemongrass for the simple syrup? While fresh lemongrass gives the best flavor, dried lemongrass can be a good substitute. For dried lemongrass, found on Amazon, steep it longer to extract the oils.

3. How long does lemongrass simple syrup last? Store your lemongrass simple syrup in an airtight container in the refrigerator. It should last up to a month. If it starts to look cloudy or smell off, it’s time to make a fresh batch.

4. What other cocktails can I make with lemongrass simple syrup? Lemongrass simple syrup pairs wonderfully with gin, rum, or even champagne! Try it in a mojito for a refreshing twist or add it to iced tea for a non-alcoholic option.

5. Can I make this cocktail in advance for a party? Yes! Mix the vodka, lemon juice, and lemongrass simple syrup in a pitcher and store it in the fridge. Just add ice, ginger beer, and garnish when you’re ready to serve.
