Juicy Baked Chicken Thigh Ingredients

Juicy baked chicken thigh ingredients with text.
  • Skinless Boneless Chicken Thighs – a more flavorful meat than chicken breasts.
  • Melted Butter – adds richness to the flavor profile. Avocado oil can be a substitute.
  • Smoked Paprika – adds a wonderful, smoky, spicy flavor. Regular paprika can be substituted.
  • Brown Sugar – adds a touch of sweetness.
  • Chili Powder – just the right amount of spice to the mixture.
  • Oregano – adds an earthy note. Italian seasoning, thyme, dill, basil, or parsley can all be substituted.
  • Onion Powder – adds to the savory richness.
  • Garlic Powder – also adds savory, garlicky richness.
  • Salt & Pepper – enhances the flavor. I prefer using kosher salt for this mixture.
  • Dry Mustard – just a little adds depth and complexity.

Quick Note

Experiment with the seasonings! Add more spice if you like a spicer rub. Substitute or add seasoning to the rub mixture if you want a different herb flavor. Embrace the mindset of “being your own chef.”

How to Make Juicy Baked Chicken Thighs

First, preheat your oven to 425 degrees.

Next, add all the dry ingredients to a mixing bowl or casserole dish and whisk together.

Now, let’s talk chicken thighs. Even boneless, skinless chicken thighs may have excess fat. Trimming the fat enhances the dish’s appeal and reduces overall fat content. I like to trim with kitchen shears. If you don’t have kitchen shears, use a sharp knife to carefully trim any visible fat around the edges and remove tough or fibrous connective tissue.

Okay, now that we’ve done that not-so-pleasant part, let’s pat the chicken pieces dry with a paper towel. This allows the rub mixture to adhere better to the chicken.

Add each chicken thigh to the rub mixture and coat evenly on each side

Raw chicken thigh added to the dry rub mixture in a casserole dish.

Next, snuggle those thighs into your cast iron and pour the melted butter evenly over the chicken.

Place it in the oven and bake for 25-30 minutes, flipping once halfway.

Cooked chicken thighs in a cast iron skillet with parsley herbs on the side.

Finally, plate those bad boys. Pour any extra sauce in the skillet over the chicken and garnish with parsley, scallions, or nothing at all.

FAQ

Can I use chicken breasts instead of chicken thighs?

Yes, BUT…be prepared for a poultry personality swap! Thighs bring juicy drama, while breasts tend to lack flavor and certainly juiciness. I would really prefer you use the thighs.

If I don’t have a cast iron skillet, what else can I use to bake the chicken thighs?

No worries! Prepare a baking sheet with foil or use a stainless steel pan. Spray either with oil to prevent the chicken from sticking. A cast iron pan is the best choice. It heats up well, resulting in juicy and tender thighs without any sticking!

Are 6-8 chicken thighs enough for my family of four?

Not if you’re my family. I have three grown men who eat like “gavones”. Each of them eats about three thighs, leaving Mama with nada. So, I always double the recipe; this way, if there are leftovers, BONUS! So that you know, the thighs shrink when baked. (Refer to my pictures above before they bake and after. ) I would say the “average” family of four, 6-8 thighs should be enough.

Can I use thighs with skin and bone-in?

Absolutely! It will come out just as juicy. Just be mindful that the cooking time could vary. I suggest skinless and boneless, only because it’s a personal preference.

Loved!!! Super easy and the whole family loved it. I made it twice, once I did not have a cast iron pan and it still tasted amazing. I have used chicken thighs with and without the bone and both were great. This is delicious and going to become a staple meal at my house.
