How to Make this Italian Chopped Salad
Chop the iceberg into bite-sized pieces. Thinly slice the salami and provolone, chop the olives, slice the red onion nice and thin, and chop the pepperoncini small. Drain and rinse the chickpeas.

Genoa salami is softer, fattier, and more tender, which is why I love it here, it blends right into every bite. Hard salami is firmer and drier, so it works too, but expect a chewier texture.
Castelvetrano olives are Italian olives from Sicily, known for their bright green color, buttery texture, and mild, slightly sweet flavor. They’re less salty and sharp than many other olives, which makes them perfect for this salad. If you can’t find them, other Italian green olives or a mixed Italian olive blend will work just fine and keep the salad in the same flavor family.
