Hey friends! Looking for a delightful alternative to the traditional heavy, rich eggnog this holiday season? I have the perfect holiday prosecco cocktail: light, refreshing, full of festive cheer, and oh-so sparkly. I call this one the Hibi Fizzy.

This bubbly drink is perfect for celebrating the season with cheer. It combines all the flavors that capture the season’s essence: hibiscus simple syrup, cranberry bitters, lime juice, prosecco, and a splash of ginger beer. It’s the perfect festive sip with a refreshing twist.

Have I mentioned how easy it is to make this cocktail? Among all the chaos of the holidays—entertaining, cooking, shopping, untangling last year’s lights—I’ve created a no-fuss, no-stress cocktail that will be a hit with your peeps. Let’s dive right in!

Holiday Prosecco Cocktail Ingredients

  • Prosecco – The celebratory sparkle! If you’re feeling generous, substitute champagne for the prosecco.
  • Hibiscus Simple Syrup – Adds floral sweetness. Making hibiscus simple syrup is super easy and costs MUCH less than store-bought syrup. It can be made weeks ahead of time and stored in the fridge; just refer to my simple hibiscus syrup post for the recipe.
  • Cranberry Bitters – Just a dash adds to the drink’s tartness. Orange bitters work well, too.
  • Lime Juice – Freshly squeezed lime adds citrusy brightness. Lemon juice will work in this cocktail as well.
  • Ginger Beer – Just a splash gives it that zesty, festive zing.

How to Craft a Holiday Prosecco Cocktail

Remember this: There’s no need for complicated steps or fancy tools for this cocktail. Please put your spin on it! Unlike my other cocktail recipes, I won’t give exact measurements for this one. It’s different. Even though there are only a few ingredients, they all have distinct flavors. So follow the steps, taste, and adjust. But I won’t leave you in the dust, I promise. Finish with a Splash of Ginger Beer

Finally, swirl with a spoon—preferably a fancy cocktail spoon. C’mon—it’s the holidays!!! Be careful not to over-stir, as this can cause bubbles to dissipate. We want to keep it fresh and fizzy. Plop in some fresh cranberries and stick in a frosted rosemary sprig, and I promise you’ll pass out a cocktail that will surely generate a “No, You Didn’t!!”

Variations of the Hibbi Fizzy

  • Adjust to your taste: add extra hibiscus syrup or an extra dash of bitters if you like a tarty cocktail. For a gingery cocktail, add more ginger beer to the top.
  • Make it a mocktail: substitute soda water for the Prosecco.
  • Garnish for the season: I titled this a holiday prosecco cocktail, but it works for ANY holiday. In the winter months, use rosemary and cranberries. In spring and summer, garnish with lime wedges and mint. Dehydrated oranges give it a fall festive flair.

FAQ

Can I make the holiday prosecco cocktail in advance?

While the cocktail is best enjoyed fresh, you can prepare the base (hibiscus syrup, bitters, lime juice) in advance and store it in the fridge. Just add ice, prosecco, and ginger beer right before serving.

How do I get the rosemary sprig to look frosty?

It’s so easy! Add granulated sugar to a small zip-lock bag. Wet the rosemary sprigs with water and add them to the bag. Shake and store in the freezer until ready to garnish. The sugar adds an extra layer of sweetness, so be mindful.

Can I make a batch of this holiday Prosecco cocktail?

Absolutely! One bottle of Prosecco makes about five to six cocktails. That’s about three ounces of hibiscus syrup, five dashes of bitters, and three limes. But remember, you’re the master crafter, so adjust to your liking. Mix, as you would in a glass, but in a pitcher. Pour the Prosecco, and top it off with the desired amount of ginger beer. Give it that swirl!
