Fennel Apple Salad: A Crisp & Cozy Fall Favorite
Sweet, tart, crunchy, buttery, nutty, and bright. This fennel apple salad brings contrast, comfort, and just the right amount of crunch to your fall table.

Thin ribbons of fresh fennel bring a cool, subtle licorice note that’s both crisp and refreshing. Granny Smith apples add tartness and crunch, while toasted hazelnuts bring warmth and richness. Chewy cranberries sneak in a little sweetness, and everything gets tossed in a light maple-Dijon dressing that’s silky, tangy, and just the right amount of sweet. It’s cozy-meets-refreshing while earthy-meets-vibrant.
This salad came to life after a weekend in Narrowsburg, where I scooped up gorgeous fennel bulbs, microgreens, a honey currant vinegar, and some of the best maple syrup I’ve ever tasted at the Narrowsburg Farmers Market. The flavors just clicked, and I had to turn them into something delicious.
I started testing it that week, and the fam kept requesting it. Now it’s on repeat, and definitely showing up at our next fall get-together (and Thanksgiving, of course). It’s the perfect fresh bite alongside all those rich, cozy dishes.
Now here’s the funny part: I was never a fennel fan. Growing up, fennel showed up exactly one way, chopped in big awkward chunks and tossed on the table after a 900-course Italian dinner. My grandmother swore it helped digestion. There was no dressing. No effort. Just cold, raw fennel, like a crunchy palate cleanser nobody asked for.
But something shifted. Maybe it’s age, maybe it’s better ingredients, maybe it’s realizing fennel actually shines when you know what to do with it. I’ve come to love its clean, crisp bite and the way it balances out heavier dishes.
So let’s funnel this fennel together and see how easy it is to whip up…
Fennel Apple Salad Ingredients

Salad Ingredients
- Fennel – Thinly sliced or shaved with a mandoline for the best texture. It adds a crisp, slightly sweet, slightly herbal bite that brightens up every forkful.
Granny Smith Apple – Tart and crunchy. You can sub in another firm, tart apple like Pink Lady or even Honeycrisp, but Granny Smith is my go-to here for its sharpness.
Hazelnuts – Chopped and toasted for extra flavor. Really, any nut will do. Almonds, walnuts, pecans, but hazelnuts have become my new nut obsession. They add a warm, buttery crunch that pairs perfectly with the other flavors.
Dried Cranberries – They add a little chew and sweetness. Feel free to swap in golden raisins, dried cherries, or currants.
Mixed Greens (optional) – Totally optional, but a great way to bulk up the salad or make it more of a side dish.
Dressing Ingredients
- Olive Oil – Use a good-quality one here; it really makes a difference in flavor.
- Apple Cider Vinegar – I love using the honey-and-currant-infused version from Farm Girl. It adds a fruity depth that plain vinegar just can’t match. Here’s their Facebook page if you want to check them out.
- Maple Syrup – Again, go for the good stuff. I used a bottle from Journey’s End Farm and it’s honestly some of the best I’ve ever tasted.
- Dijon Mustard – Just a little, to bring everything together and give the dressing some balance.
- Salt + Pepper to taste – Don’t skip this part. Taste and season right at the end before serving.
How to Make a Fennel Apple Salad
Step 1: Make the Dressing
Whisk together the olive oil, apple cider vinegar, Dijon mustard, and maple syrup. Season with a little salt and pepper. Set it aside while you prep the rest. This gives the flavors time to mingle and come together.

Step 2: Slice the Fennel
Thinly slice the fennel bulb. If you have a mandoline, now’s the time to whip it out—it works so well for this. If you don’t have one… what the heck? You deserve one. They’re fun.

Step 3: Prep the Apple
Chop your apple into small, thin pieces. Don’t stress about perfection here. Some variety in shape and size gives the salad great texture.

Step 4: Toss the Base
Add the sliced fennel and chopped apple to a large bowl. Toss in the dried cranberries and mixed greens or microgreens if you’re using them.
Step 5: Toast the Hazelnuts
Place the hazelnuts in a zip-top bag and give them a few good whacks with something heavy. You want uneven chunks. Toast them in a dry skillet over low heat for about 5 minutes, stirring often, until golden and fragrant. Set aside to cool slightly.

Step 6: Bring It All Together
Pour the dressing over the salad and toss gently to coat. Plate it up, then sprinkle the toasted hazelnuts right on top so they stay nice and crunchy.

Fennel Apple Salad Variations to Try
This salad is super flexible, so feel free to riff a little:
- Swap the nuts: Walnuts or pecans are great here too. Candied nuts? Even better.
- Use a different fruit: Try thinly sliced pear or even roasted delicata squash for a more autumnal twist.
- Add cheese: A little crumbled goat cheese or shaved Parmesan adds creaminess and tang.
- Make it heartier: Add farro, quinoa, or lentils for a more filling salad.
- Swap dressing ingredients: Swap the apple cider vinegar for lemon juice or the maple syrup for honey.
Make-Ahead Tips
You can absolutely prep most of this salad ahead of time:
- Dressing: Make it up to 3 days in advance and store it in a jar in the fridge.
- Fennel & Apple: Slice these the morning of and store them in an airtight container with a splash of lemon juice to keep the apples from browning.
- Toast the nuts: Do this up to a few days ahead—just keep them in a sealed container to stay crunchy.
- Assemble just before serving so everything stays crisp and fresh.
