Fall Flatbread with Apples, Leeks, and Pancetta
If you’re looking for the ultimate fall appetizer, this Fall Flatbread is it. Golden pizza dough is topped with caramelized leeks, sweet chopped apples, crispy pancetta, and a blanket of melty Fontina. It’s rustic and cozy yet feels a little gourmet.

And if you’ve just come back from apple picking, here’s your savory curveball. After the pie, the crumble, maybe even a caramel-dipped apple or two, this flatbread takes those apples in a whole new direction. Paired with leeks and cheese, they’re transformed into a simple, unexpected, and completely delicious bite.
Truth be told, I am a savory kinda gal. Give me pancetta and cheese over sugar any day. But I promise there are more desserts coming your way to balance out those dinner parties. For now, let’s harvest up those apples and leeks and put them to work in a flatbread that is easy to pull together, reheats beautifully, and disappears slice by slice.
Fall Flatbread Ingredients

- Olive oil – Helps the leeks caramelize slowly and adds richness. I also like to drizzle a little more over the flatbread at the end for extra flavor.
- Butter – A touch of butter with the olive oil makes the leeks even silkier and deepens their flavor.
- Leeks – My favorite legume. As they caramelize, they soften and turn sweet with that mellow, almost buttery flavor that makes this flatbread shine.
- Granny Smith apple – Tart and crisp. The bright flavor balances beautifully against the rich pancetta and cheese.
- Pancetta – Adds a little smokiness and salt. I love the way it crisps up, and I usually grab the pre-cubed packages to make life easier.
- Pizza Dough – store bought or homemade, you’re the boss.
- Fontina cheese – Melts like a dream. It’s creamy, nutty, and ties all the savory and sweet flavors together in every bite.
- Parmesan cheese (optional) – A sprinkle at the end gives a salty finish and a touch of sharpness.
- Fried sage (optional) – Crispy sage leaves on top add a cozy, fall-herbal note that takes the flatbread up a notch.
How to Make Fall Flatbread
Preheat your oven to 425°F. Start by thinly slicing the leeks and giving them a really good rinse. Leeks tend to hide dirt and grit between their layers, so don’t skip this step.

In a sauté pan, melt some butter with a splash of olive oil. Add in the leeks and sauté for about two minutes. Then stir in a tablespoon of water, cover the pan, and let them sweat for another eight minutes until they’re soft and just starting to caramelize. Right at the end, toss in the chopped apples for one minute so they warm through but still keep a little bite. Set that mixture aside for now.

In a separate pan, cook your pancetta until it’s crisp and golden. Drain it on a paper towel.

Now roll out your dough on a lightly floured surface. Don’t worry about making it perfect, rustic edges look great here. Transfer it to a baking sheet brushed with olive oil and bake for about eight minutes, just until lightly golden.
Top the crust with the leek and apple mixture, sprinkle over the pancetta, and add the Fontina. Return it to the oven for two to three minutes, just until the cheese is melted and bubbly.
Finish with a sprinkle of Parmesan or a few fried sage leaves if you like. Slice it up, serve warm, and enjoy.

Make Ahead and Reheating Tips
Make-ahead is my jam. As much as I love my kitchen, I don’t love having my back to my peeps while they’re hanging out. This Fall Flatbread is the kind of recipe that lets you be part of the fun and still serve something impressive.
Here’s the trick: prep it up to the point where you par-bake the dough and assemble the flatbread with the leeks, apples, pancetta, and Fontina. Stop there.
Cover the tray and tuck it in the fridge until you’re ready to bake. When the crew shows up, all you have to do is slide it into the oven for those last few minutes. The cheese melts and everything gets bubbly and cozy.
And if you somehow have leftovers (rare, but it happens), just reheat slices on a baking sheet in a 350°F oven for about 8 minutes. The crust crisps back up, the cheese softens again, and it tastes just as good as the first round.
Fall Flatbread Freestyle (Variations)
- Switch up the cheese – Fontina melts like a dream, but you could easily use Gruyère, Brie, or even sharp white cheddar if that’s what you’ve got on hand.
- Go vegetarian – Skip the pancetta if you’re cooking for your vegetarian friends. Want to keep that smoky depth without the meat? Try a pinch of smoked paprika or even smoked sea salt sprinkled over the top.
- No leeks? No problem – If leeks are hiding from you at the market, caramelized onions work just as well. They bring that same sweet, mellow vibe once cooked down.
- Play with the apples – I love Granny Smith for the tartness, but Honeycrisp or Pink Lady would be delicious if you prefer something a little sweeter.
