This creamy peppercorn sauce is rich, cozy, and one of my favorite make-ahead sauces for steak night.

It’s made with simple ingredients like butter, shallots, garlic, brandy, cracked peppercorns, beef stock, and a splash of heavy cream. Nothing fancy, but somehow it tastes like you ordered it at your favorite steakhouse.

I’m a little obsessed with this sauce. It’s easy, it’s make-ahead (have I said that already? because it deserves repeating), and it somehow tastes even better the next day.. There are certain sauces you keep in your back pocket for the moments when dinner needs to feel a little more intentional. This one is mine. It’s creamy, peppery, and somehow manages to feel both simple and romantic all at once.

It always shows up at the Christmas table next to the steak. And at my holiday party, I cut the filet into little bites so everyone can dip right into this beautiful sauce. A little indulgence around the holidays never hurt anyone. In fact, my crew fully expects it every year.

But my favorite way to enjoy it is date night at the cabin. A perfectly cooked steak, a candle or two, and this creamy, peppery swirl…let’s just say it makes for one very happy Lala.

Now let me show you how to crack the peppercorn code.

Creamy Peppercorn Sauce Ingredients

All the ingredients in creamy peppercorn sauce on a wooden surface with with text next to each ingredient.
  • Butter – Gives the sauce that rich, warm base and helps everything sauté nicely.
  • Shallots – They soften down and bring a mellow flavor to the sauce.
  • Garlic – Just a hint here. Adds a little warmth without taking over.
  • Brandy – Any brandy will do. It cooks down and gives the sauce its signature flavor.
  • Whole Peppercorns – Give them a gentle smash to release the flavor. Leave some chunky pieces for texture and that peppery pop.
  • Beef Stock – I always choose stock over broth. It adds that deep, steakhouse-style richness.
  • Cornstarch (optional) – I like a thicker sauce. So I whisk a little into the stock before it hits the pan.
  • Worcestershire Sauce – Adds a savory depth/
  • Heavy Cream – This is what makes it creamy and luxurious. No swaps here.
  • Salt – Add to taste at the end to bring everything together.

How to make creamy peppercorn sauce

Start by cracking those peppercorns. The easiest way is to toss them in a ziplock and give them a good whack with a mallet or the bottom of a heavy pan. Don’t pulverize them, we want chunky bits for texture.

In a small bowl, whisk together your beef stock and cornstarch. I like a thicker sauce, so I always do this step. Set that aside for a minute.

Now, grab your heavy stainless-steel pan and melt the butter over medium heat. Add your chopped shallots and stir with a wooden spoon for about a minute until they start to soften. Garlic goes in next, just for about 30 seconds.

Pour in the brandy and let it cook down for about 3 minutes, until most of it has soaked into the shallots and garlic.

Add in your cracked peppercorns, the beef stock mixture, and the Worcestershire. Give it a good stir so everything combines.

Now for the heavy cream. Pour it in and keep stirring until the sauce looks silky and dreamy. Taste it. Adjust to taste with a pinch or two of salt.

And that’s it. Sauce done. You officially cracked the peppercorn code.

Cabin Tip

If you’re making this sauce right after cooking your steak. Cook the steak in the pan until done, then set it aside and let it rest. And instead of starting with a clean pan, add the butter right into those gorgeous steak drippings. Let it melt and pick up all that flavor hanging out on the bottom of the pan. My steak lovers may come for me, but when that sauce is done, I cannot resist slathering it all over the steak. It’s just too good.

Make ahead, Storing & Reheating

This sauce is amazing when made ahead. It gets even better the next day as the peppercorn and brandy settle in together.

  • Make it a day or two before you need it.
  • Store in a sealed container in the fridge.
  • Warm gently on the stove, adding a splash of stock or cream if it thickens too much.
  • It can be stored in an air-tight container for up to a week.

Perfect for Christmas dinner, holiday parties, and cozy date nights in.

Creamy Peppercorn Sauce FAQ’s

Can I freeze this sauce?

Not really. Actually, no. The cream in the sauce doesn’t freeze well and can get a little funky when thawed.

Can I use a different alcohol?

Brandy is the classic choice, but cognac works if that’s what you have in your liquor cabinet.

Do I have to use cornstarch?

Nope! Only if you like a thicker sauce, which I do.

Can I make it without alcohol?

Yes! Just add a little extra beef stock instead of brandy.

What’s the difference between beef stock and beef broth?

Beef stock is made from simmering beef bones, so it has a richer, deeper flavor and gives the sauce that steakhouse vibe. Beef broth is made from simmering the meat, so it’s lighter and not as bold. For this sauce, stock brings way more flavor.

Notes

If you want a more steak-forward flavor profile, make the sauce right after you cook your steaks. Add the butter straight into the steak drippings instead of starting with a clean pan. All those browned bits on the bottom melt right into the sauce and make it richer, deeper, and extra delicious.
