This bright, tropical blue curaçao cocktail is pure eye candy—but it’s not just here to look pretty. Vodka gives it a clean, crisp edge, while pineapple juice, fresh lime, and a splash of coconut simple syrup bring the flavor. It’s light, citrusy, and just the right amount of sweet.

Bright blue curaçao cocktail with lime wedge garnish, served over ice in a stemmed glass on a wooden tray with sliced limes and fresh greenery.

The Blue River isn’t just a cocktail, it’s a little escape. The color alone feels like a vacation, but it’s the combo of citrus and sweet coconut that really does it for me. It tastes like a beach day, but somehow still fits right in at a backyard hangout. It’s tropical, it’s easy, and it brings that laid-back, sun-drenched energy no matter where you’re sipping.

We had a family reunion at the cabin one 4th of July, and the weather was crap. It was creeping up on cocktail hour, and I had to batch something up fast before the big ping pong tournament in the garage… or maybe it was beer pong. No judgments, right?

Anyway, the Blue River was born. The fam thought it was so refreshing and delicious—maybe a little too refreshing and delicious—because I kept running back to the cabin to make more. You’ve gotta try it for your peeps. It’s a crowd-pleaser, rain or shine.

Blue Curacao Cocktail Ingredients

  • Blue curaçao – Obvi.
  • Vodka – I’m a Tito’s girl, but use whatever you love.
  • Light pineapple juice – I go with light to keep the cocktail that bold, bright blue. If you use regular pineapple juice (which is more concentrated), it might turn green. Not a problem if you’re going for green—just check out my green cocktail.
  • Coconut simple syrup – You can use plain simple syrup, but I love the extra tropical note it adds. And it’s so easy to make—just keep scrolling and I’ll show you how.
  • Fresh lime juice – Always freshly squeezed. It makes a difference.

How to Make a Blue Curacao Cocktail

Add all the ingredients to a shaker filled with ice and give it a good shake.

Pour into a cocktail glass filled with fresh ice.

Want a little extra fizz? Top it off with a splash of club soda. That’s it—easy, breezy,

But Wait—Weren’t You Gonna Tell Me How to Make Coconut Simple Syrup?

Yep, I got you.

Add the sugar and water to a small saucepan and bring it to a simmer. Stir until the sugar dissolves completely, then remove from heat and stir in the coconut extract. Let it cool, then stash it in the fridge. It’ll keep for about three weeks—if it lasts that long.

OMG, once you taste this, you’re going to be finding excuses to use it all summer. Splash it into your seltzer, stir it into iced coffee, drizzle it over grilled pineapple, or sneak it into your next batch of lemonade. You’ll be hooked.

I know coconut extract might seem like a slightly bougie purchase, but trust me—it lasts forever, and just a few drops turn a basic syrup into tropical magic. Totally worth the shelf space.

Let’s Talk Garnish

  • You don’t have to garnish, but come on—it’s a Blue River. Let’s have some fun with it:
  • Lime wheel or wedge – fresh, zesty, and classic.
  • Coconut flakes – rim your glass with it for a little tropical crunch. For rimming how-to’s, check out my winter martini post.
  • Tiny paper umbrella – vintage, cool, and very Tom Cruise in Cocktail. (My younger peeps—Google it. Worth the watch.)
  • Sugar rim – for an extra-sweet, extra-pretty finish. I’m obsessed with these colorful sugars I found on Amazon.
  • Use what you have, get a little creative, and just have fun with it. It’s just a cocktail.

What Is Blue Curaçao, Anyway?

Besides being the star of this cocktail and the reason it looks like summer in a glass, blue curaçao is a citrus liqueur made from the dried peel of laraha oranges grown on the island of Curaçao. It’s sweet, slightly bitter, and has a bold orange flavor—think Triple Sec but with a way better wardrobe. The bright blue color? Totally artificial, totally iconic, and totally food-safe.

How to Make It Ahead & Batch It Up

Hosting a crowd? This cocktail was made for batching. Here’s my go-to party pitcher recipe:

  • 2 cups vodka
  • 3 cups light pineapple juice
  • 1 cup blue curaçao
  • ½ cup coconut simple syrup
  • ½ cup fresh lime juice

Mix everything in a pitcher. Chill until you’re ready to pour, then serve over ice and top with a splash of soda if you’re feeling fizzy.

This makes about 8–10 cocktails, depending on how heavy you pour and how much ice is in the glass.

Cabin Tip

Give it a quick stir before serving—pineapple juice can settle. And maybe hide a backup pitcher in the fridge, because this one goes fast.
