There’s something about blackberries that feels so perfectly between seasons to me. They’re technically a summer fruit, but that dark, moody color screams early fall vibes.

Just a few weeks ago, I saw these gorgeous blackberries at the farmer’s market. They looked absolutely amazing and I couldn’t resist, so I grabbed a few pints thinking I’d finally make that blackberry pie I’ve been promising my peeps all summer. Guess what? That pie never happened.

But you know what did happen? I noticed my thyme plant had completely taken over its corner of the garden box, and suddenly, cocktail hour seemed like a way better idea. Turns out thyme and blackberries are ridiculously good together. And then add a spirit? Hey, now!!!!

AND, this blackberry cocktail comes together in about 2 minutes. Just muddle, shake, and top with fizz. Let me show you how easy it gets.

Ingredients for a Blackberry Cocktail with Thyme

  • Fresh blackberries – Fresh is best, but frozen works too in a pinch.
  • Thyme simple syrup – Plain simple syrup will work, but trust me, the thyme adds this amazing earthiness. Check out my hibiscus simple syrup post for more detailed instructions on making flavored syrups.
  • Fresh lemon juice – Always freshly squeezed. Please don’t use the bottled stuff.
  • Fresh thyme – Shake it in the cocktail shaker to add that extra bit of fresh herb taste.
  • Vodka – I like vodka because it doesn’t compete with the berries, but gin and tequila work too.
  • Club soda – For the fizz. Or use Prosecco if you’re feeling like you want an extra boozy sip.

How to Make a Blackberry Cocktail with Thyme

Muddle the berries. In a cocktail shaker, add a handful of fresh blackberries, your thyme simple syrup, and freshly squeezed lemon juice. Press them together with a muddler (or the back of a spoon) until the berries release all their juicy goodness and become jammy.

Add the spirit. Pour in the vodka. If gin or tequila’s calling your name, go for it.

Shake it up. Add a good amount of ice, toss in a couple fresh thyme sprigs, and shake for a good 10 seconds.

Strain and top. Fill your cocktail glass with fresh ice. Strain the mixture over the top, then finish with club soda.

Garnish and serve. Add a few blackberries and a sprig of thyme for that extra touch.

Tips for the Perfect Blackberry Cocktail Every Time

  • Fresh is best. Fresh blackberries give the most vibrant color and flavor, but frozen will work in a pinch—just thaw them first.
  • Adjust the sweetness. Taste your drink before topping with club soda. If you want more sweetness, add an extra splash of thyme simple syrup.
  • Think about glassware. This cocktail looks stunning in a short ribbed glass, but a coupe or stemless wine glass works too.
  • Batch it for a crowd. Hosting? Multiply the recipe and mix it in a pitcher. Top each glass with soda right before serving for maximum fizz.

Variations to Try

  • Blackberry Gin Fizz – Swap the vodka for gin and keep the Prosecco for a floral, bubbly twist.
  • Spicy Blackberry Margarita – Replace vodka with tequila, add a splash of orange liqueur, and rim the glass with chili salt.
  • Blackberry Bourbon Smash – Go cozy and rich by using bourbon instead of vodka, similar to my Summer Bourbon Cocktail.
  • Berry Prosecco Sparkler – Top with Prosecco instead of club soda for a celebration-worthy drink.

What to Serve with a Blackberry Cocktail

This blackberry cocktail plays well with both sweet and savory bites. Here are a few pairing ideas for a super easy cocktail party for your peeps:

  • Whipped Feta Dip – Easy, creamy, and dippable. Serve it with fresh veggies or crackers for a light, tangy starter.
  • Risotto Balls – Crispy on the outside, creamy inside, and just the right amount of savory. Perfect bite-sized indulgence.
  • Parmesan Polenta Fries – Crispy edges, creamy center, and totally snackable. Serve with marinara or garlic aioli.
  • Zucchini Squares – Soft, cheesy, and full of fresh zucchini flavor.
